How do I decline “politely” a Hermès bag? I feel like I must be thankful and accept whatever they are offering, because if I don’t they would be mad and won’t offer anything, ever.

After patiently waiting for a quota bag offer, it is a natural reaction to worry about the repercussions if you refuse the offer. Refusing an offer may feel like a stressful situation, but in reality it is a large purchase and you should be confident with your choice.
Your SA wants you to love and cherish every Hermès bag you purchase. They will not be mad at you for refusing a bag offer. The bag will sell to another person in a matter of minutes.
At times, the SA is not able to fulfill the exact specifications on your wishlist but the bag that arrived is very close. They offer you an option you may be interested in adding to your collection. Sometimes, the bag is a wonderful surprise in a size, color, leather or hardware you never considered. When viewing it in person you may realize it is the perfect addition to your collection.
Alternatively, you may be offered a quota bag with different specifications such as a Kelly Retourne but you wanted a Sellier. This is a tough choice. Do you accept the Retourne now or wait for the same bag in a Sellier although there is no guarantee it will arrive and be offered to you?
Bottom line, If you do not love the bag, you should not accept the offer.
Being honest with your SA is the best way to approach everything. Buying an Hermès bag is a large financial and emotional commitment. You should not buy a bag or any other item from Hermès that you do not truly love and want to use or give as a gift to another person. If you reject a bag, that is an opportunity for your SA to get to know your likes and dislikes better.
You will be offered another bag. It may take longer to get what you want, but in the end it will be worth the wait.
